Broccoli cheddar beer soup

Ingredients

1 small onion chopped
1 small carrot chopped
1 celery stalk chopped
3 tbsp butter
3 tbsp flour
1 cup chicken stock
1 teaspoon tabasco sauce
1 teaspoon pepper
1 teaspoon salt
1 teaspoon Worcester sauce
1/2 tsp mustard powder
1 bottle beer
1 cup cream
2 cups milk
2 cups broccoli florets
1 cup cheddar cheese

Method

1. Melt butter in a large pot on medium heat.
2. Add onion, carrot and celery and saute until soft.
3. Add flour and mix in over the heat until thicken.
4. Add stock, beer, tabasco sauce, pepper, salt, Worcester sauce and mustard powder
5. Add broccoli florets and let simmer for 1 minute or until broccoli is soft.
6. Add cream, milk and cheese
7. Take a stick blender and blend all broccoli pieces until they are totally broken up.
Serve with danish feta!

Skinny banana smoothie

Ingredients per glass
1 banana sliced and frozen
1 cup low fat milk
1 tsp honey

 

Method
Put everything into blender or smoothie maker and blend! 
If you want this smoothie even skinnier, you can substitute half the milk for ice or low fat yogurt.

Carrot cake with cream cheese frosting

This is a copycat recipe from dana made it.

Ingredients:

2 - 4 carrots

1/2 cup oil
2 cups sugar
3 eggs
2 tsp vanilla

2 cups flour
2 tsp baking soda
1 tsp salt
2 tsp cinnamon

1 cup buttermilk (or 1 cup lowfat milk mixed with 2 tsp vinegar)
Cream cheese frosting ingredients:
110 gr (about a half a tub) Cream Cheese 
1/4 cup butter (at room temperature) I used one tablespoon, you can also skip the butter
1 tsp vanilla
2 - 3 cups powdered sugar

Method
Heat the oven to 170º.
Grease a 13x9 pan (or 2 to 3 round pans)

NOTE: I don't believe in nuts and raisins in Carrot Cake. I think it ruins the bite. But if you like them, throw them in the mix!

1. Grate 2 - 4 carrots. Measure 2 cups of loosely-packed carrots (don't cram the carrots into the measuring cup) and set them aside.

2. Prep your "buttermilk". If you ever have a recipe that calls for buttermilk, you can create an easy substitute by mixing 1 cup of milk with 2 tsp vinegar. Mix and let it sit while you prepare the rest of the ingredients:

3. In a large bowl beat the oil, sugar, eggs and vanilla together until light, about two minutes.

4. Stir together the flour, baking soda, salt and cinnamon.

5. Add the flour mixture and the buttermilk to the creamed mixture. Beat for another two minutes.

6. Stir in the carrots.

7. Pour into a 9x13 pan and Bake for 33 - 40 minutes or just until the center springs back when lightly touched. Cool on a wire rack before frosting. (I baked one round cake and kept the rest of the batter for cupcakes)

For the cream cheese frosting

1. Cream together the cream cheese, butter and vanilla. (This is Amy waiting for a piece of cake!)

2. Add the powdered sugar and enough milk to make a creamy, spreadable frosting. (I used about a tablespoon of milk)

3. And, you're done!

How to make cake balls

This is just one of those things that you see all over the Internet or at that one child's great birthday party, but never really had the guts to make it yourself. Well, now you can. It's ridiculously easy and definitely something to make all your friends jealous.

Amy had her birthday last Sunday and I ordered a huge cake and decided to decorate it myself. Not too bad for my first time working with plastic icing, right?

So there was WAY too much cake left and I was tired of eating plastic icing. So this is what I did.

Took all the icing off the cake and broke it up in chunks.

I then took my stick blender and made small crumbs of it all. You can also do this by hand.

I then mixed enough butter icing there for it to be able to be rolled into balls.

I then melted about a table spoon of white cooking chocolate in the microwave, dipped the top parts of sticks in the chocolate and then sticked it into the balls. This will secure the balls to not fall off the sticks. You should put the balls with the sticks in the fridge for at least an hour to totally set before dipping it.

Now I melted about a cup of white cooking chocolate and dipped the balls carefully into the chocolate. It helped to use a spoon or fork to totally cover the balls, but for the smoothest results, it's best to dip it with one motion. I sprinkled some Milo, strawberry milkshake or even green coloured chocolate over some. So pretty!
